Our client is an international fine-dining group opening a luxury Indian restaurant and bar in Glen Waverley, VIC. The venue combines a refined Indian-led menu with a sophisticated bar program featuring classic, contemporary and fusion cocktails.
Role Overview
We are seeking a Bartender to help shape and execute the bar program. You will craft elevated cocktails, manage bar mise en place and support tasting-menu pairings, working closely with the restaurant and management team to deliver a cohesive guest experience.
Key Responsibilities
• Mix and present cocktails to spec with a focus on consistency, balance and presentation.
• Create and refine fusion cocktails incorporating Indian and Italian ingredients and flavour profiles.
• Maintain bar mise en place, including clarified juices, syrups, cordials and batched cocktails.
• Ensure all responsible-service and licensing requirements are met.
• Maintain bar cleanliness, glassware standards, ice program and opening/closing procedures.
• Support stock management and assist with monthly inventory and variance tracking.

Requirements
We are recruiting a Bartender for a high-end Indian restaurant and bar in Glen Waverley, VIC, operated by an international fine-dining group. The bar program features classic and contemporary cocktails with Indian and Italian influences, supporting both à la carte and tasting-menu formats.
What you’ll be doing:
Execute classic and contemporary cocktails to spec and craft fusion signatures using Indian and Italian ingredients (e.g. amaro, vermouth, kokum, tamarind, mango, spices).
Maintain bar mise en place: clarified juices, cordials, tinctures, syrups, fat-washes and precise batching for speed and consistency.
Curate premium spirits, amari and vermouths; advise guests on pairings for tasting menus and spice profiles.
Uphold glassware presentation, garnish work, ice program and station cleanliness; complete opening/closing checklists.
Manage stock, par levels and wastage; assist with inventory counts and costings.
Verify IDs and comply with local licensing and responsible-service laws; handle guest issues discreetly and professionally.
Skills & Qualifications:
1–2+ years’ experience in premium cocktail bars or luxury hotel bars.
Strong classic and contemporary cocktail knowledge with the ability to create fusion signatures.
Experience with advanced techniques: clarification, fat-wash, cordials, syrups, tinctures and batching.
Good spirits and wine knowledge, particularly for food and spice pairings.
High standards in speed, cleanliness, mise en place and cash/POS accuracy.
Understanding of stock control, par levels, variance tracking and waste reduction.
Discreet and guest-focused approach, with strong communication skills.
Additional requirements:
Responsible Service of Alcohol (RSA) or jurisdictional equivalent – essential.
Food Safety/Allergen awareness for bar operations.
Formal bar training (e.g. BarSmarts) or WSET Level 1–2 in Spirits/Wine (preferred).
Strong work ethic, diligence and willingness to learn from international training.
Ability to adopt and maintain SOPs established by the group’s bar leadership.
Impeccable grooming, punctuality and guest-first communication style.
